Our process of genetics selection is quite fascinating. Think of it like a meticulous recipe for creating the best quality beef. We raise Wagyu cattle with a very specific set of genetic traits that are carefully maintained and enhanced over generations. This is done through a process called selective breeding.
Purebred Pursuit
Here at our ranch, we primarily work with fullbloods, a term referring to our animals consisting of 98% or greater of wagyu genetics. All of our registered animals can be traced back at least 5 generations. Our goal is to carefully select animals that are ideal for our recipient program, which results in significantly growing our herd in shorter time frames.
Instead of directly breeding our angus cattle to a bull, we leverage science by using embryo transfers. The results are offspring that are 100% fullblood wagyu calves, which do not contain genetics from its mother. The mother or “recipient,” acts as a surrogate.
We search for traits that include things like a calm temperament and most importantly, the ability to develop highly marbled meat at about 30 months of age. Marbling is the fine streaks of fat within the muscle, which gives Wagyu beef its famous tenderness and rich flavor.
